Parfait base
Prepare yogurt mixture
In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract and lemon zest (if using) until smooth and slightly aerated. Taste and adjust sweetness with more honey if desired. Chill while you prepare other components.

Preheat oven
Preheat the oven to 325°F (160°C). Line a large baking sheet with parchment paper.
Mix dry ingredients
In a large bowl combine the rolled oats, slivered almonds, puffed millet or quinoa (if using), shredded coconut (if using), brown sugar, ground cinnamon and salt. Toss to distribute evenly.
Add wet ingredients
Drizzle the maple syrup and oil over the oat mixture. Stir thoroughly so the oats and nuts are evenly coated.
Bake granola
Spread the mixture in an even layer on the prepared baking sheet. Bake for 18–22 minutes, stirring once at about 10 minutes, until golden brown and fragrant. Watch closely toward the end to avoid burning.
Cool and store
Remove from oven and let the granola cool completely on the baking sheet; it will crisp as it cools. Once cooled, break into clusters. Store in an airtight container for up to 2 weeks.

Prepare berries
If desired, place the strawberries, blueberries and raspberries in a bowl, sprinkle with the lemon juice and gently toss to macerate for 5 minutes. This brightens flavor and makes berries slightly saucier.
Layer parfaits
Divide the yogurt mixture among 4 glasses or jars (about 3/4 cup each). Start with 1/4 cup yogurt, then add about 1/4 cup granola, then a spoonful of mixed berries. Repeat once to create two layers, finishing with a small sprinkle of granola and a few berries on top. Reserve extra granola and berries for serving if desired.
Garnish and serve
Top each parfait with a mint leaf if using. Serve immediately for crunchy granola. If making ahead, store assembled parfaits in the fridge up to 2 hours; keep granola separate if you want to retain full crunch for longer.
