Preparation
Wash and Prep the Potatoes
Rinse the fingerling potatoes under cold water to remove any dirt. Pat them dry with a clean kitchen towel. Optionally, you can cut larger potatoes in half lengthwise for even cooking.
Chop the Fresh Herbs
Finely chop the fresh rosemary, thyme, and parsley, and combine them in a small bowl.
Cooking
Preheat the Oven
Preheat your oven to 400°F (200°C).
Season the Potatoes
In a large mixing bowl, combine the washed fingerling potatoes, olive oil, salt, black pepper, and chopped herbs. Toss until the potatoes are evenly coated with the oil and herbs.
Roast the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and tender when pierced with a fork, tossing halfway through the cooking time for even browning.
Serve
Remove the roasted fingerling potatoes from the oven and let them cool slightly before serving. Enjoy them warm as a side dish or appetizer.
