Preheat the Oven
Preheat your oven to 425°F (220°C).
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
Cut in Butter
Add the cold unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
Shape the Biscuits
Turn the dough onto a floured surface and gently pat it to about 1-inch thick. Use a biscuit cutter to cut out biscuits and place them onto a baking sheet lined with parchment paper.
Bake
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
Homemade Jam
Prepare the Fruit
Wash the fresh fruit thoroughly. If using strawberries, hull and chop them into smaller pieces.
Cook the Jam
In a medium saucepan, combine the prepared fruit, granulated sugar, and lemon juice. Cook over medium heat, stirring frequently until the mixture comes to a boil.
Simmer
Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the mixture thickens to your desired consistency.
Cool and Store
Remove from heat and let the jam cool before transferring it to a clean jar. Store in the refrigerator.
Serving
Serve Warm
Serve the warm biscuits with a generous spread of homemade jam and a drizzle of local honey on top.
