Cooking Pasta

    Boil Water

    In a large pot, bring salted water to a rolling boil.

    Cook Fettuccine

    Add the fettuccine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, reserve about 1 cup of pasta water and drain the fettuccine.

Preparing Mushroom Mixture

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and diced shallot, cooking until fragrant, about 2-3 minutes.

    Cook Mushrooms

    Add the wild mushrooms and fresh thyme to the skillet. Sauté until the mushrooms are tender and browned, about 5-7 minutes.

Making the Sauce

    Add Cream and Truffle Butter

    Reduce the heat to low and stir in the heavy cream and truffle butter. Allow the mixture to simmer for 2-3 minutes until slightly thickened.

    Combine Pasta and Sauce

    Add the drained fettuccine to the skillet with the mushroom sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency.

    Finish with Parmesan

    Stir in grated Parmesan cheese until melted and well combined with the pasta.

Serving

    Plate the Dish

    Serve the fettuccine in bowls, garnished with freshly ground black pepper and chopped chives.
