Cooking the Pasta

Boil Water
In a large pot, bring 4-5 liters of salted water to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, approximately 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water, then drain the spaghetti.
Making the Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

Prepare Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Add Egg Mixture
Pour the egg and cheese mixture over the pasta, quickly tossing to combine thoroughly. Add reserved pasta water a little at a time until creamy.
Serving

Plate the Carbonara
Serve immediately in bowls, garnished with extra Parmesan cheese and freshly cracked black pepper.
