Method

For the Shepherd's Pie

  1. 1

    Prepare the Filling

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots, cooking until they are softened, about 5 minutes.

  2. 2

    Add Lamb and Seasoning

Add the minced garlic and ground lamb to the skillet. Cook until the lamb is browned, breaking it apart with a spatula. Season with salt and black pepper.

  3. 3

    Combine Ingredients

Stir in the tomato paste, Worcestershire sauce, and broth. Add the frozen peas. Simmer the mixture for 10 minutes, allowing the flavors to meld.

  4. 4

    Assemble the Shepherd's Pie

Transfer the lamb mixture into a baking dish. Spread the prepared mashed potatoes evenly on top.

  5. 5

    Bake

Preheat the oven to 200°C (400°F). Bake the assembled Shepherd's Pie for 25-30 minutes, or until the top is golden brown.

For the Side Salad

  1. 6

    Prepare the Salad

In a large bowl, combine the mixed field greens, halved cherry tomatoes, and sliced cucumber.

  2. 7

    Dress the Salad

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle over the salad and toss gently to combine.
