Make the Pastry Dough

In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure the salt is evenly distributed.

Add the unsalted butter (cut into small pieces) to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Avoid overmixing.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour to allow it to firm up.

Form the Palmiers
