Pastry Dough

Sugar Coating

Method

Make the Pastry Dough

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure the salt is evenly distributed.

  2. 2

    Cut in Butter

Add the unsalted butter (cut into small pieces) to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Avoid overmixing.

  4. 4

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour to allow it to firm up.

Prepare the Sugar Coating

  1. 5

    Mix Sugar and Cinnamon

In a small bowl, combine the granulated sugar and ground cinnamon. Mix until well blended.

Form the Palmiers

  1. 6

    Roll Out the Dough

On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick.

  2. 7

    Add Sugar Coating

Sprinkle the sugar and cinnamon mixture evenly over the rolled-out dough.

  3. 8

    Fold the Dough

Starting from one long side, roll the dough tightly towards the center until you reach the middle. Repeat with the other side so that both rolls meet in the center.

  4. 9

    Chill Again

Wrap the rolled dough in plastic wrap and refrigerate for an additional 30 minutes to firm up.

Bake the Palmiers

  1. 10

    Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 11

    Slice the Dough

Remove the chilled dough from the refrigerator and slice it into 1/2 inch thick pieces.

  3. 12

    Arrange on Baking Sheet

Place the sliced palmiers on the prepared baking sheet, leaving space between each for spreading.

  4. 13

    Bake

Bake in the preheated oven for 12-15 minutes, or until golden brown and caramelized. Flip them halfway through for even baking.

  5. 14

    Cool

Remove the palmiers from the oven and let them cool on a wire rack before serving.
