Method

Prepare Pastry Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Mix well.

  2. 2

    Cut in Butter

Cut 1 cup of unsalted butter into small pieces and add to the flour mixture. Use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add 4 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water.

  4. 4

    Chill the Dough

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare Fillings

  1. 5

    Mix Cream Cheese Filling

In a medium bowl, combine 8 oz of cream cheese, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract. Beat with an electric mixer until smooth and creamy.

  2. 6

    Prepare Berries

Wash and slice the mixed berries as needed, ensuring they are ready to be added to the pastry.

Assemble Mini-Pastry Baskets

  1. 7

    Preheat Oven

Preheat the oven to 375°F (190°C).

  2. 8

    Roll Out Dough

On a floured surface, roll out the chilled pastry dough to about 1/8 inch thickness. Use a round cutter to cut out circles, and fit them into the cups of a mini muffin tin.

  3. 9

    Bake Pastry Shells

Prick the bottom of each pastry shell with a fork and bake in the preheated oven for 12-15 minutes, or until golden brown. Allow to cool.

  4. 10

    Fill Pastry Shells

Once the pastry shells are cooled, fill each with the cream cheese mixture and top with mixed berries.

Serve

  1. 11

    Garnish and Serve

Top each mini-pastry basket with a dollop of whipped cream and garnish with mint leaves. Serve immediately and enjoy!
