Method

Crust Preparation

  1. 1

    Make the Crust Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

  2. 2

    Add Butter

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  3. 3

    Incorporate Egg Yolk

Add the egg yolk and cold water to the mixture. Stir until the dough begins to come together.

  4. 4

    Chill the Dough

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Baking the Crust

  1. 5

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 6

    Roll out the Dough

On a floured surface, roll out the chilled dough to about 1/8 inch thickness.

  3. 7

Cut and Fit into Tartlet Molds

Cut out circles of dough and fit them into tartlet pans. Prick the bottoms with a fork to prevent bubbling.

  4. 8

    Bake the Crusts

Bake in the preheated oven for 15-20 minutes or until golden brown. Remove from oven and let cool.

Pastry Cream Preparation

  1. 9

    Heat Milk

In a saucepan, heat the whole milk over medium heat until it is hot but not boiling.

  2. 10

    Mix other Ingredients

In a separate bowl, whisk together the granulated sugar, cornstarch, and egg yolks until smooth.

  3. 11

    Combine and Thicken

Slowly pour the hot milk into the egg yolk mixture while whisking continuously. Then return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.

  4. 12

    Finish the Cream

Remove from heat, stir in the vanilla extract and unsalted butter until melted and smooth. Let cool.

Assembling the Tartelette

  1. 13

    Fill the Tart Crusts

Once the pastry cream has cooled, fill the baked tartlet shells with the cream using a spoon or piping bag.

  2. 14

    Prepare the Fruit Topping

Wash and slice the mixed fresh fruits as desired.

  3. 15

    Arrange Fruits

Top the pastry cream with the sliced fruits in an artistic manner.

  4. 16

    Glaze the Fruit

In a small saucepan, combine apricot jam and water, heat until melted. Brush the glaze over the fruit for shine.

  5. 17

    Serve

Chill the assembled tartelettes for about 15 minutes before serving.
