Preparing the Marinara Sauce

Cook the Garlic
In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes and Seasoning
Pour in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer. Reduce heat to low and let it cook for about 20 minutes, stirring occasionally. Adjust seasoning if needed.
Preparing the Calamari

Prepare the Dry Mix
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip the calamari rings first into the wet mix, then dredge them in the dry mix, making sure they are well coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with marinara sauce.
