    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare the Cream Mixture

    In a saucepan, combine the heavy cream and the vanilla bean (split and seeds scraped out) over medium heat. Stir occasionally until the mixture is hot but not boiling.

    Mix Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.

    Strain the Mixture

    Strain the combined mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any solids.

    Prepare Ramekins

    Place six ramekins in a baking dish and pour the custard mixture evenly into each ramekin.

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

    Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

    Before serving, sprinkle about 1 teaspoon of granulated sugar over the top of each chilled custard. Using a kitchen torch, caramelize the sugar until it is golden brown and forms a crust. Alternatively, you can place them under a broiler.
