Prepare the Lava Cake Batter

    Melt Butter and Chocolate

    In a medium saucepan, melt the unsalted butter and semisweet chocolate over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.

    Whisk Eggs and Sugar

    In a large mixing bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and thick, about 2-3 minutes.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture while continuously whisking to avoid cooking the eggs.

    Add Remaining Ingredients

    Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.

Bake the Lava Cakes

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four ramekins (6 oz each) with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

    Remove from the oven and let the cakes sit for 1 minute before inverting onto plates.

    Dust the top of each lava cake with powdered sugar.
