Preparing the Calamari

Step 1: Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Step 2: Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

Step 3: Soak the Calamari
Pour the buttermilk into another bowl. Dip the calamari rings into the buttermilk, allowing the excess to drip off, then dredge them in the flour mixture until well coated.

Step 4: Heat the Oil
In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Step 5: Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Step 2: Add Tomatoes and Spices
Stir in the canned crushed tomatoes, red pepper flakes, dried oregano, sugar, and salt. Bring to a simmer.

Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.

Remove from heat and stir in the chopped fresh basil. Adjust seasoning with salt if needed.
