Preparing the Dough

    Activate Yeast

    In a small bowl, dissolve the sugar in warm water and sprinkle the yeast over the top. Let it sit for about 5-10 minutes, until it becomes frothy.

    Combine Dry Ingredients

    In a large mixing bowl, combine the flour and salt, mixing well.

    Mix Wet Ingredients

    In another bowl, combine the milk and melted butter. Add the activated yeast mixture once it's frothy.

    Form the Dough

    Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Preparing the Filling

    Sauté Vegetables

    In a skillet over medium heat, sauté the diced onion, bell pepper, and chopped spinach until softened, about 5-7 minutes.

    Scramble Eggs

    In a bowl, whisk together the eggs, salt, and black pepper. Pour the eggs into the skillet with the vegetables and cook, stirring gently, until the eggs are just set, about 3-4 minutes.

    Add Cheese

    Remove the skillet from heat and stir in the shredded cheddar cheese until melted. Set aside to cool slightly.

Assembling the Rolls

    Roll Out the Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle about 1/4 inch thick.

    Add Filling

    Spread the egg and veggie filling evenly over the dough rectangle, leaving a small border around the edges.

    Roll and Cut

    Starting from one edge, carefully roll the dough tightly into a log. Cut the log into 8 equal pieces.

    Second Rise

    Place the rolls in a greased baking dish, cover them with a towel, and let them rise for another 30 minutes.

Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Egg Wash

    Beat the egg for the egg wash and brush it over the tops of the rolls.

    Bake Rolls

    Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown.
