Prepare Grits

In a pot, bring 4 cups of water to a boil. Add the grits and cook according to package instructions until thickened. Stir in butter and cheddar cheese until melted. Season with salt and black pepper.

Cook Shrimp

In a skillet, melt a tablespoon of butter over medium heat. Add minced garlic and sauté for 1 minute. Add shrimp, season with salt and pepper, and cook until shrimp are pink (about 3-4 minutes).

Assemble Dish

Serve the grits in a bowl, top with shrimp, and garnish with chopped green onions.

Chicken and Waffles

Fry Chicken

Season the chicken breast with salt and pepper. In a skillet, heat oil over medium-high heat and fry the chicken until golden and cooked through (about 6-7 minutes per side). Remove and let rest.

Prepare Waffles

In a bowl, mix waffle mix, beaten egg, and milk until combined. Pour batter onto a preheated waffle iron and cook according to manufacturer's instructions.

Prepare Beignet Batter

In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together milk and egg. Mix wet ingredients into dry until just combined.

Heat oil in a deep pan over medium heat. Once hot, drop spoonfuls of batter into the oil and fry until golden brown (about 2-3 minutes). Remove and drain on paper towels, then dust with powdered sugar.

In a bowl, whisk together flour, baking powder, sugar, and salt. Add milk and beaten eggs, and stir until just combined. Heat a skillet over medium heat, pour batter for pancakes, and cook until bubbles form, then flip and cook until golden brown.

In another skillet, heat oil or butter over medium heat. Add cubed potatoes and season with salt and pepper. Cook until crispy and tender, about 10-12 minutes.
