Grilled Cheese Sandwich

Tomato Soup

Method

Grilled Cheese Sandwich

  1. 1

    Prepare the Ingredients

Gather all the ingredients needed for the grilled cheese sandwich: sourdough bread, cheddar cheese, and butter.

  2. 2

    Butter the Bread

Spread one tablespoon of butter on one side of each slice of sourdough bread.

  3. 3

    Assemble the Sandwich

Place two slices of bread, buttered side down, on a cutting board. Layer two slices of cheddar cheese on top of each slice of bread. Top with the remaining bread slices, buttered side up.

  4. 4

    Grill the Sandwich

Heat a skillet over medium heat. Once hot, place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.

  5. 5

    Slice and Serve

Once cooked, remove the sandwiches from the skillet. Allow to cool for a minute, then slice in half and serve.

Tomato Soup

  1. 6

    Prepare the Ingredients

Gather all the ingredients for the tomato soup: canned tomatoes, onion, garlic, vegetable broth, olive oil, salt, black pepper, and basil.

  2. 7

    Sauté the Aromatics

In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

  3. 8

    Add Tomatoes and Broth

Pour in the canned tomatoes (including their juice) and vegetable broth. Stir to combine, then bring to a boil.

  4. 9

    Simmer the Soup

Reduce heat to low and let the soup simmer for about 15 minutes to allow the flavors to meld.

  5. 10

    Season the Soup

Season the soup with salt, black pepper, and basil to taste. Blend the soup with an immersion blender until smooth, or transfer to a blender in batches.

  6. 11

    Serve

Ladle the hot tomato soup into bowls and serve alongside the grilled cheese sandwich.
