Thoroughly wash the potatoes under cold running water to remove any dirt. Peel the potatoes if desired, then cut them into approximately 1-inch cubes.

Preheat your oven to 425°F (220°C).

In a large mixing bowl, combine the diced potatoes with olive oil, garlic powder, onion powder, paprika, dried rosemary, salt, and black pepper. Toss well until all the potato cubes are evenly coated with the oil and seasonings.

Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or foil for easy cleanup.

Bake in the preheated oven for about 25-30 minutes. Halfway through the baking time, stir the potatoes to ensure even cooking and browning.
