Shrimp and Grits

Prepare the Grits

In a pot, bring 4 cups of water to a boil. Add 1 cup of grits, reduce heat to low, and stir occasionally until thickened (about 20-25 minutes).

Cook the Shrimp

In a skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute. Add shrimp, salt, and pepper. Cook until shrimp turn pink (about 3-4 minutes). Stir in butter and cheese until melted.

Combine

Once grits are thick, stir in the shrimp mixture. Serve warm.

Chicken and Waffles

Cook the Chicken

Season chicken breasts with salt and pepper. In a skillet, heat cooking oil over medium heat and cook chicken until golden brown and cooked through (about 6-7 minutes per side).

Prepare the Waffles

In a bowl, mix waffle mix, eggs, milk, and salt. Preheat waffle maker and pour in the batter. Cook until golden brown (about 4-5 minutes).

Plate chicken on waffles and drizzle with maple syrup.

Beignet Balls

Prepare the Dough

In a bowl, mix flour, sugar, baking powder, and salt. In another bowl, whisk egg, milk, and vanilla. Combine wet and dry ingredients until a dough forms.

Fry the Beignets

Heat oil in a deep pan. Drop spoonfuls of dough into hot oil and fry until golden brown (about 2-3 minutes). Drain on paper towels.

Dust with Sugar

While still warm, dust beignets with powdered sugar.

Pancakes and Country Potatoes

Cook the Potatoes

Peel and dice the potatoes. In a skillet, heat olive oil over medium heat. Add potatoes, salt, pepper, and paprika. Cook until golden and tender (about 15-20 minutes).

In a bowl, mix pancake mix and water until smooth. Heat a griddle over medium heat, pour batter to form pancakes, and cook until bubbles form (about 2-3 minutes per side).

Plate pancakes alongside country potatoes.
