    Combine Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Mix Wet Ingredients

    In a separate bowl, whisk together the milk, egg, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.

Frying

    Heat Oil

    In a deep pot or heavy-bottomed pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can use a kitchen thermometer to check the temperature.

    Fry Beignets

    Using a small cookie scoop or spoon, carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes on each side or until golden brown.

    Drain and Cool

    Once golden brown, remove the beignets from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
