Prepare the Cutlets
Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. Season both sides with salt and black pepper.

Coat the Cutlets
Dredge each veal cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with bread crumbs, pressing gently to adhere.

Cook the Cutlets
In a large skillet, heat the butter and olive oil over medium-high heat. Once hot, add the breaded cutlets, cooking for 3-4 minutes on each side until golden brown and cooked through.
