    Prepare the Potatoes

    Boil the potatoes until tender. Drain and allow to cool slightly. Cut them into wedges.

    Make the Béarnaise Sauce

    In a saucepan, combine shallots, white wine vinegar, and tarragon. Simmer until reduced by half. Let cool slightly, then whisk in egg yolks and gradually add melted butter. Season with salt and pepper.

    Grill the Steak

    Preheat the grill. Brush the steak with olive oil, and season with salt and pepper. Grill for 4-5 minutes on each side for medium-rare.

    Finish the Potatoes

    In a skillet, melt butter over medium heat. Add garlic and sauté for 1 minute. Add the potato wedges, season with salt and pepper, and toss to coat.
