Tartare Preparation

Dice the Tuna
Carefully dice the Yellowfin tuna into small cubes, about 1/4 inch in size. Place in a mixing bowl.

In a small bowl, whisk together the soy sauce, yuzu juice, rice vinegar, and mirin until well combined.

Combine Dressing with Tartare
Pour the ponzu dressing over the tuna and vegetable mixture. Gently toss to combine, ensuring all ingredients are coated.
Sesame Snow Preparation

Prepare Sesame Snow
In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 2-3 minutes. Be careful not to burn them.

Make Sesame Snow
Once toasted, let the sesame seeds cool slightly, then grind them with salt in a mortar and pestle or spice grinder until they resemble snow.
Assembly

Plate the Tartare
Spoon the tuna tartare mixture onto a serving plate or in a bowl.

Sprinkle the sesame snow over the tartare for a finishing touch.
