Salad Preparation
Prepare the Lettuce
Wash and dry the romaine lettuce. Tear the leaves into bite-sized pieces and place them in a large salad bowl.
Add Cheese and Croutons
Grate the parmesan cheese and sprinkle it over the romaine lettuce. Add the croutons to the salad.
Dressing Preparation
Make the Dressing
In a bowl, mash the garlic cloves and anchovy fillets together until a paste forms.
Combine Ingredients
Add the egg yolk, Dijon mustard, Worcestershire sauce, and lemon juice to the garlic-anchovy paste. Mix well to combine.
Emulsify the Dressing
Slowly drizzle in the olive oil while whisking continuously until the dressing is well emulsified and creamy.
Season the Dressing
Add salt and black pepper to the dressing, adjusting to taste.
Assembly
Combine Salad and Dressing
Pour the dressing over the prepared lettuce, cheese, and croutons in the salad bowl. Toss gently to combine, ensuring everything is evenly coated.
Serve
Serve immediately, garnished with additional parmesan cheese if desired.
