Method

Onion-Bacon Jam Directions

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Chop into small pieces.

  2. 2

    Sauté the Onions

In the same skillet, add the chopped onions and cook over medium heat until they are soft and caramelized, about 15 minutes.

  3. 3

    Combine Ingredients

Add the chopped bacon back to the skillet with the onions. Stir in brown sugar, balsamic vinegar, salt, and black pepper. Cook for an additional 5 minutes until well combined. Set aside.

French Fries Directions

  1. 4

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips to make fries.

  2. 5

    Heat the Oil

In a large pot, heat vegetable oil to 350°F (175°C) over medium-high heat.

  3. 6

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt while hot.

Burger Directions

  1. 7

    Cook the Beef Patties

Season the dry aged beef patties with salt and pepper. In a grill or skillet over medium-high heat, cook the patties for 4-5 minutes on each side, or until they reach your desired doneness.

  2. 8

    Melt the Cheese

During the last minute of cooking, place a slice of Vermont cheddar cheese on each patty and cover the skillet or grill to melt the cheese.

  3. 9

    Assemble the Burger

On a toasted bun, place the cooked beef patty with melted cheddar, top with a generous spoonful of onion-bacon jam, and drizzle with umami sauce. Serve immediately with a side of French fries.
