Combine Ingredients
Add the chopped bacon back to the skillet with the onions. Stir in brown sugar, balsamic vinegar, salt, and black pepper. Cook for an additional 5 minutes until well combined. Set aside.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to make fries.

Heat the Oil
In a large pot, heat vegetable oil to 350°F (175°C) over medium-high heat.

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt while hot.
