Method

Prepare Steak Tartare

    Chop the Beef

    Finely chop the beef tenderloin using a sharp knife. Aim for small, uniform pieces to ensure a smooth texture.

    Mix Ingredients

    In a bowl, combine the chopped beef with the egg yolk, capers, diced cornichons, Dijon mustard, Worcestershire sauce, finely chopped shallot, and chopped parsley. Season with salt and black pepper to taste.

    Form the Tartare

    Using a ring mold or your hands, shape the beef mixture into a round patty and place it on a plate.

Prepare Frisée Salad

    Wash the Frisée

    Rinse the frisée lettuce under cold water and dry it gently using a salad spinner or kitchen towel.

    Dress the Salad

    In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Drizzle the dressing over the frisée and toss gently to coat.

Make Sourdough Toast

    Heat a skillet over medium heat. Spread butter on one side of each slice of sourdough bread. Place the bread butter-side down in the skillet and toast until golden brown, about 2-3 minutes per side.
