Steak Preparation

    Season the Steak

    Remove the flat iron steak from the refrigerator and let it come to room temperature for about 30 minutes. Season both sides liberally with salt and black pepper.

    Cook the Steak

    In a skillet over medium-high heat, add olive oil. Once the oil is shimmering, add the steak. Cook for about 4-5 minutes on each side for medium-rare or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

French Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

Chimichurri Sauce Preparation

    Make the Sauce

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until finely chopped but still slightly chunky. Adjust seasoning to taste.

Assembly

    Plate the Dish

    Slice the rested steak against the grain. On a plate, arrange the steak slices alongside a generous portion of French fries. Drizzle chimichurri sauce over the steak and garnish with fresh red cresson.
