    Prepare the scallops

    Rinse the fresh scallops under cold water and pat them dry with paper towels. Cut them into small, bite-sized pieces and place them in a glass or ceramic bowl.

    Finely chop the jalapeño pepper, removing the seeds if you prefer less heat. Dice the red onion into small pieces. Roughly chop the fresh cilantro leaves.

    In the bowl with the scallops, add the lime juice, chopped jalapeño, diced red onion, and chopped cilantro. Stir gently to combine all the ingredients evenly.
