Roasted Honey Squash

Prepare the Honey Squash
Preheat your oven to 400°F (200°C). Cut the honey squash in half lengthwise and scoop out the seeds.

Roast the Squash
Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-35 minutes, or until tender.

Prepare the Kale
Wash the Tuscan kale leaves thoroughly, remove the thick stems, and chop the leaves into bite-sized pieces.

Cashew Cream

Soak the Cashews
Soak the raw cashews in water for at least 2 hours or overnight. Drain and rinse before use.

Blend the Cashew Cream
In a blender, combine the soaked cashews, water, nutritional yeast, and garlic powder. Blend until smooth and creamy. Adjust the consistency with more water if needed.
