Add Garlic and Deglaze
Mince the garlic cloves and add them to the pot. Cook for an additional 2-3 minutes until fragrant. Pour in the dry white wine and scrape any browned bits from the bottom of the pot. Let it simmer for 5 minutes.

Add Broth and Seasonings
Add the beef broth, bay leaves, thyme, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to meld.

Broil the Gratin
Preheat your broiler. Place the bowls on a baking sheet and broil until the cheese is bubbly and golden brown, about 3-5 minutes. Watch carefully to prevent burning.

Remove the bowls from the oven and sprinkle with chopped fresh parsley. Serve immediately while hot.
