    Prepare the Crust

    Preheat your oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and add it to the bowl, mixing until the mixture resembles wet sand.

    Form the Crust

    Press the crumb mixture into the bottom of a 9-inch springform pan, ensuring it is evenly spread and compact. Bake in the preheated oven for about 10 minutes, then remove and let it cool while preparing the filling.

    Prepare the Filling

    In a large mixing bowl, beat the cream cheese with a hand mixer or stand mixer until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar, sour cream, and vanilla extract, mixing until well combined.

    Add Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix. Finally, add the lemon juice and mix gently.

    Bake the Cheesecake

    Pour the filling into the cooled crust. Bake in the oven for about 60-70 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about an hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight, before serving.
