Preparation

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and dill.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    Wash and trim the asparagus, slice the bell peppers and zucchini. Toss them in a little olive oil and season with salt and pepper.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    Place the seasoned vegetables on the grill, cooking for about 5-7 minutes or until they are tender and have grill marks.

Lemon Butter Sauce

    Prepare the Sauce

    In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in lemon juice and a pinch of salt. Remove from heat and mix in chopped parsley.

Serving

    Plate the Dish

    Serve the grilled salmon with the seasonal vegetables on the side. Drizzle the lemon butter sauce over the salmon and enjoy!
