Preparation

  1. 1

    Trim the Green Beans

Wash the fresh green beans under cold water to remove any dirt. Trim the ends of the green beans using a sharp knife to remove the hard tips.

  2. 2

    Prepare the Almonds

In a dry skillet over medium heat, toast the sliced almonds for 3-5 minutes or until they are golden brown, stirring frequently. Remove from heat and set aside.

Cooking

  1. 3

    Blanch the Green Beans

In a large pot, bring salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.

  2. 4

    Sauté the Garlic

In a large skillet, heat the olive oil and 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. 5

    Combine Ingredients

Drain the green beans from the ice water and add them to the skillet with the sautéed garlic. Toss to coat the beans in the oil and butter mixture. Season with salt, ground black pepper, and lemon juice. Cook for another 2-3 minutes, stirring frequently.

  4. 6

    Finish with Almonds

Remove the skillet from heat and stir in the toasted almonds. Add the remaining tablespoon of butter if desired, and toss everything together until well combined.

Serving

  1. 7

    Plate the Dish

Transfer the green beans almondine to a serving dish. Serve warm as a side dish alongside your favorite main course.
