Calamari Preparation

Prepare the Buttermilk Marinade
In a bowl, combine buttermilk with a pinch of salt and pepper. Add the calamari rings to the bowl and let them marinate for at least 30 minutes in the refrigerator.

Mix the Dry Coating
In a separate bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Coat the Calamari
Remove the marinated calamari from the refrigerator and coat each ring in the flour mixture, shaking off any excess.
Frying the Calamari

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Simmer the Sauce
Add the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir well and let simmer for about 15 minutes, allowing the flavors to meld.

Finish the Sauce
Stir in the freshly chopped basil and adjust seasoning if necessary. Remove from heat.
