Preparing the Chicken Milanese

Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides.

Dredging Station
Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Coat the Chicken
Coat each chicken breast in flour, then dip into the egg, and finally coat with breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

Trim the ends of the Brussels sprouts and slice them very thinly (you can use a mandoline for this).

In a small bowl, whisk together lemon juice, Dijon mustard, minced garlic, olive oil, salt, and black pepper to create the dressing.

In a large bowl, combine the shaved Brussels sprouts and Parmesan cheese. Drizzle with the dressing and toss to combine.
