Method

Chicken and Sandwich Assembly

  1. 1

    Prepare the Chicken

Grill the chicken breast over medium heat for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C). Let it rest before slicing.

  2. 2

    Prepare the Tomato Confit

In a saucepan, combine halved tomatoes, olive oil, salt, and herbs. Simmer on low heat for about 30 minutes until soft. Set aside to cool.

  3. 3

    Cook the Bacon

In a pan over medium heat, cook the bacon slices until crispy. Drain on paper towels.

  4. 4

    Prepare the Avocado

Slice the avocado in half, remove the pit, and scoop out the flesh. Slice thinly and set aside.

  5. 5

    Assemble the Sandwich

On a slice of toasted bread, spread a layer of mayonnaise. Layer with Boston lettuce, sliced grilled chicken, bacon, tomato confit, and avocado. Top with another slice of bread. Repeat for additional sandwiches.

Housemade Chips

  1. 6

    Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash and thinly slice the potatoes with a mandoline or sharp knife, leaving the skin on for extra flavor.

  2. 7

    Season and Bake

In a bowl, toss the potato slices with olive oil, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet.

  3. 8

    Bake the Chips

Bake in the preheated oven for about 20-25 minutes, flipping halfway, until golden brown and crispy. Remove and let them cool slightly before serving.
