Crust Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes and then remove from the oven to cool.

Filling Preparation

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar and continue beating until well combined.

    Add remaining ingredients

    Mix in the sour cream, vanilla extract, and lemon juice until smooth. Then, add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

    Combine and pour

    Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.

Baking

    Bake the cheesecake

    Bake the cheesecake in the preheated oven for 50 to 60 minutes, or until the edges are set but the center still jiggles slightly.

    Cool and chill

    Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, or overnight for the best results.
