In a small saucepan, combine equal parts sugar and water (1 cup each) over medium heat. Stir until the sugar is fully dissolved and the mixture is clear. Allow to cool before using.

Combine the Ingredients
In a cocktail shaker, add 2 oz of bourbon, 3 oz of fresh lemon juice, 1 oz of simple syrup, 1 egg white, and 2 dashes of Angostura bitters.

Dry Shake
Seal the cocktail shaker tightly and shake vigorously without ice for about 15 seconds. This helps emulsify the egg white, creating a frothy texture.

Shake with Ice
Add 1 cup of ice to the shaker and shake again for an additional 15-20 seconds until well chilled.

Strain the Cocktail
Strain the mixture into a chilled coupe or rocks glass. You can use a fine mesh strainer for a smoother finish.
