Preparation

Prepare the Apples

Wash and core the fresh apples. Cut them into quarters and place them in a large pot.

Add Water

Pour 4 cups of water over the quartered apples in the pot.

Cook the Mixture

Bring the mixture to a boil over medium heat, then reduce to a simmer. Allow it to simmer for about 30 minutes until the apples are soft.

Strain the Juice

Using a fine mesh strainer or cheesecloth, strain the mixture to extract the apple juice into another large container.

Sweeten the Juice

Stir in 1 cup of sugar until dissolved in the warm apple juice. Adjust sweetness to taste.

Add Flavorings

Add the cinnamon sticks, cloves, and lemon juice to the apple juice and stir well.

Ferment the Cider

Sprinkle 1 tsp of yeast over the juice and stir gently. Cover the container with a cloth and let it sit at room temperature for 24-48 hours.

Bottling

Bottle the Cider

After fermentation, strain the juice again to remove spices and sediment. Pour the cider into clean bottles, leaving some space at the top.

Carbonate (Optional)

If you want a sparkling cider, add 2 cups of sparkling water to each bottle before sealing. You can also add honey to taste for additional sweetness.

Seal and Chill

Seal the bottles and refrigerate for at least 3 days before serving to allow flavors to meld.
