Method
Chamomile-Honey Syrup (make ahead or same day)
Infuse and combine
In a small saucepan combine 1/2 cup water and 1/2 cup honey. Add 1 tablespoon dried chamomile flowers (or 2 chamomile tea bags). Bring to a gentle simmer for 3 minutes, then remove from heat and steep for 10 minutes, covered.
Strain the syrup through a fine mesh sieve, pressing on the flowers to extract syrup. Cool to room temperature. Transfer to a clean bottle and refrigerate. Yields roughly 3/4 to 1 cup; use 0.75 oz per cocktail.
Cocktail Assembly
Dry shake
Add 2 oz blanco tequila, 1 oz fresh pink grapefruit juice, 0.5 oz fresh lemon juice, 0.75 oz chamomile-honey syrup, and 1 egg white to a cocktail shaker without ice. Dry shake vigorously for 15–20 seconds until frothy and emulsified.
Wet shake
Add a large handful of ice to the shaker and shake again vigorously for 10–15 seconds to chill and slightly dilute the cocktail, achieving a silky texture.
Double strain
Double strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a smooth foam.
Garnish and aroma
Lightly slap the lemon thyme sprig between your hands to release oils, then float or rest it on top of the foam. Express the grapefruit twist over the drink to release citrus oils and place on the rim. Sprinkle a tiny pinch (about 1/4 tsp) of dried chamomile flowers on the foam if desired for visual and aromatic effect.
