Prepare the Pulled Pork
In a slow cooker, place the pork shoulder, chopped yellow onion, minced garlic, curry powder, smoked paprika, brown sugar, salt, and black pepper. Add a cup of water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Make the Curry Slaw
In a large bowl, combine shredded cabbage and grated carrots. In a separate bowl, mix mayonnaise, apple cider vinegar, and a pinch of salt. Combine the two mixtures and toss well to coat. Let it chill in the fridge for at least 30 minutes.

Prepare Tobacco Onions
Slice onions thinly and fry in hot oil until crispy and golden brown. Remove from oil and drain on paper towels.
