Prepare Lamb Chops

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, salt, black pepper, and chopped rosemary. Add lamb chops and coat them well. Let marinate for at least 30 minutes.

    Grill the Lamb

    Preheat the grill to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest before serving.

Make Peppadew Nam Prik

    Combine Ingredients

    In a small bowl, mix chopped Peppadew peppers, minced Thai chili, fish sauce, and lime juice. Stir well and set aside.

Prepare Cardamom Cashews

    Roast Cashews

    In a skillet over medium heat, add olive oil and cashews. Cook until lightly golden, then stir in ground cardamom and salt. Cook for another minute and remove from heat.

Make Papaya-Mint Vinaigrette

    Blend Vinaigrette

    In a blender, combine diced papaya, fresh mint leaves, olive oil, lime juice, honey, salt, and black pepper. Blend until smooth.

Assemble Salad

    Mix Salad Ingredients

    In a large bowl, combine arugula, cherry tomatoes, and cucumber. Drizzle with lemon juice and olive oil, then season with salt and pepper. Toss to combine.
