Prepare the Oysters
Shuck the oysters and place them in a bowl. Rinse under cold water and drain well.

Make the Breading
In a shallow dish, combine flour, cornmeal, salt, and black pepper. In another bowl, whisk together eggs and milk.

Coat the Oysters
Dip each oyster first in the egg mixture, then dredge in the flour mixture, ensuring they're well-coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Oysters
Carefully add the oysters to the hot oil in batches, frying for about 2-3 minutes on each side until golden brown. Transfer to a paper towel-lined plate.

Prepare the Artichoke-Mushroom Cream
In a saucepan, melt butter over medium heat. Add the artichoke hearts and mushrooms, sautéing until soft. Pour in the heavy cream and simmer until thickened, about 5 minutes.
