Char Siu Pork Tenderloin and Accompaniments

Method

Instructions

  1. 1

    Prepare Marinade

In a bowl, mix together soy sauce, hoisin sauce, honey, rice vinegar, five spice powder, minced ginger, minced garlic, salt, and pepper. Add the pork tenderloin and marinate for at least 2 hours, preferably overnight.

  2. 2

    Cook the Pork

Preheat oven to 400°F (200°C). Remove pork from marinade and reserve the marinade. Sear the pork in a hot skillet with oil for 2-3 minutes on each side until browned. Transfer to a baking dish and brush with reserved marinade. Bake for 20-25 minutes or until internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.

  3. 3

    Prepare Ginger Jasmine Rice

Rinse jasmine rice under cold water until water runs clear. In a pot, add rinsed rice, 1.5 cups of water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and mix in minced ginger.

  4. 4

    Blanch Broccolini

Bring a pot of salted water to a boil. Add broccolini and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

  5. 5

    Make Sweet Chili Gastrique

In a small saucepan over medium heat, combine sweet chili sauce and any remaining marinade. Simmer for 5-7 minutes until slightly thickened.

  6. 6

    Prepare Black Garlic Wontons

Place a small amount of minced black garlic in the center of each wonton wrapper. Moisten edges with water, fold over to form a triangle, and press to seal. Heat oil in a skillet and fry wontons until golden brown on both sides. Drain on paper towels.

  7. 7

    Serve

Slice the pork tenderloin and serve with ginger jasmine rice, blanched broccolini, and drizzle with sweet chili gastrique. Add black garlic wontons on the side.
