Enchiladas

Method

Prepare Enchiladas

    Cook the Meat

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, cook until browned. Season with salt and pepper.

    Prepare Chicken

    In a separate bowl, mix shredded chicken with green tomatillo sauce and chopped cilantro.

    Assemble Beef Enchiladas

    Take a corn tortilla, fill with cooked ground beef mixture, roll tightly, and place in a baking dish. Repeat until all beef is used.

    Assemble Chicken Enchiladas

    Take a corn tortilla, fill with shredded chicken mixture, roll tightly, and place in the baking dish alongside beef enchiladas.

    Top with Sauces

    Pour red enchilada sauce over the beef enchiladas and green tomatillo sauce over the chicken enchiladas. Sprinkle shredded cheese on top.

    Bake

    Preheat oven to 375°F (190°C). Bake for 20-25 minutes until cheese is bubbly.

Prepare Tacos

    Cook the Taco Meat

    In a skillet, add ground beef and taco seasoning. Cook until meat is browned and cooked through.

    Assemble Tacos

    In corn tortillas, add cooked taco meat, shredded lettuce, diced tomato, sour cream, and sliced avocado.

    Plate the Dish

    Serve the enchiladas and tacos together on a platter. Garnish with extra cilantro if desired.
