Crab & Shrimp Stuffed Poblano Recipe

Roast the Peppers

Preheat the oven to 400°F (200°C). Place poblano peppers on a baking sheet and roast in the oven for about 20-25 minutes, turning occasionally, until the skins are blistered and charred. Remove from the oven and let cool slightly.

Prepare the Filling

In a large mixing bowl, combine the cooked crab meat, chopped shrimp, cream cheese, minced garlic, chopped green onions, cheddar cheese, lemon juice, salt, and black pepper. Mix well until all ingredients are well incorporated.

Stuff the Peppers

Once the poblano peppers are cool to the touch, carefully peel off the charred skin. Make a slit down the side of each pepper and remove the seeds. Stuff each pepper generously with the seafood filling.

Bake the Stuffed Peppers

Place the stuffed poblano peppers back on the baking sheet. Bake in the preheated oven for an additional 15-20 minutes, until the filling is heated through and the tops are slightly golden.

Serve

Remove from the oven and let cool for a few minutes. Serve warm, optionally topped with additional shredded cheese or a drizzle of your favorite sauce.
