Prepare the Pork

Season the pork shoulder with salt and pepper. In a large pot, braise the pork in a bit of oil over medium-high heat until browned on all sides.

Make the Honey Chipotle Glaze

In a bowl, mix honey, chipotle peppers, and lime juice. Pour this mixture over the browned pork, cover, and reduce the heat to low. Cook for about 3-4 hours until the pork is tender.

Shred the Pork

Once cooked, remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and mix it with the glaze.

Prepare the Sautéed Vegetables

Slice the bell peppers and onion. In a skillet, sauté them in a bit of oil over medium heat until they are tender.

Make the Guacamole

In a bowl, mash the avocados and mix in some lime juice, salt, and chopped cilantro to taste.

Prepare the Lime Crema

In a small bowl, mix sour cream with lime juice and chopped cilantro. Adjust seasoning to taste.

Assemble the Fajitas

Serve the shredded pork in warm flour tortillas with sautéed peppers and onions. Top with lime crema, guacamole, pico de gallo, and fresh cilantro.
