    Cook the Rice

    In a medium pot, combine 1 cup of white rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked. Fluff with a fork and set aside.

    Prepare the Steak

    Season the steak with salt, black pepper, and lime juice. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly.

    In the same skillet, add another tablespoon of olive oil. Sauté sliced bell peppers and onion until softened and slightly charred, about 5-7 minutes. Season with salt and pepper.

    In a bowl, layer the cooked rice, roasted corn, black beans, sautéed peppers and onions, sliced steak, queso fresco, and grape tomatoes. Top with crispy tortilla strips and drizzle lime crema on top.
