Preparation and Cooking

    Prepare the Rub

    In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, cayenne pepper, cumin, salt, and black pepper until well combined.

    Prepare the Ribs

    Pat the ribs dry with paper towels. Rub the olive oil all over the ribs, then generously apply the spice mixture, making sure to coat all sides.

    Grill the Ribs

    Preheat the grill to medium heat. Place the ribs on the grill bone-side down. Cover and grill for about 4 hours, turning occasionally, until the ribs are tender and the meat pulls away from the bone.

    Serve

    Remove the ribs from the grill and let them rest for 10 minutes before slicing. Serve stacked with your choice of sides, such as jalapeño slaw.
