    Make the Dough

    In a large bowl, mix together the flour, baking powder, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the warm water gradually until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    Roll and Cut

    Cover the dough with a damp cloth and let it rest for 30 minutes. After resting, roll the dough to about 1/4 inch thickness. Cut into 2-inch squares or triangles.

    Fry the Sopapillas

    Heat oil in a deep fryer or a deep skillet to 375°F (190°C). Fry the dough pieces in batches until they puff up and turn golden brown, about 2-3 minutes on each side. Remove them and drain on paper towels.

    Serve

    Sprinkle the hot sopapillas with powdered sugar and serve with honey on the side for dipping.
