    Prepare the Barbacoa

    If you haven't done so already, prepare the barbacoa beef by slow-cooking it with spices until tender. Shred the beef and set aside.

    Prepare the Ingredients

    Chop the onion and cilantro. Set aside for topping.

    Heat the Tortillas

    In a skillet, heat 1 tablespoon of cooking oil over medium heat. Place a corn tortilla in the skillet and sprinkle a generous amount of Oaxaca cheese on one half of the tortilla. Add a portion of shredded barbacoa beef on top of the cheese.

    Cook the Quesa-Birria

    Fold the tortilla over to create a half-moon shape. Cook until the cheese is melted and the tortilla is golden brown, about 3-4 minutes per side. Repeat with remaining tortillas and filling.

    Serve

    Serve the Quesa-Birria hot, garnished with chopped onions, cilantro, and lime wedges on the side. Provide a small bowl of barbacoa broth for dipping.
